A Dinner to Remember with Massimo Bottura (FoodieS & Qubicle, Apr 2016)

It was a moment to remember for a lifetime. It was the moment when the world’s most renowned chef Massimo Bottura visits the country and shows his love for food for Jakarta’s most discerned gourmets at Hotel Mulia Senayan last March.

Rumor has it that Massimo Bottura, one of the world’s most critically acclaimed chefs and the proprietor of prestigious three Michelin-starred restaurant Osteria Francescana in Modena – Italy, will reach the shores of Jakarta for two-day exclusive dinner services at the five star Hotel Mulia Senayan.

That was last year. After much anticipation, it was finally confirmed that the prodigious chef will cater only limited gourmet diners of the country from March 18-19 in 2016 exclusively at Orient 8.

It becomes a wonderful opportunity for FoodieS to be seated on the front row seats to witness the chef himself, in full spirit, explaining how excited he was to be in Indonesia and sharing his bit about the inspirations behind the success, his magical creations, and his tireless innovation with contemporary cuisine and local ingredients.

For those of you who are already familiar with the chef through Netflix’s Chef’s Table, the episode about Massimo Bottura was everything we want to know about his vision, his struggles, and the rise to prominence with his now twenty one year old restaurant.

Osteria Francescana itself was recently crowned as the number two of The World’s 50 Best Restaurants. As depicted in the inspirational episode of the series and true to the story, Massimo Bottura was also accompanied by his beloved wife and muse, Lara Gilmore.

The chef presents a nine course meals for this spectacular opportunity with Indonesian diners, ranging from appetizers like “Come to Italy with Me” or an amuse bouche made of tomato, basil, and mozzarella in a shape of macaron and a unique rendition of Emilia Romagna’s fish and chips in a form of a light and airy cushion. Also surprising us was Chef Bottura’s beautiful lentils with crème fraiche and dill served on a vessel filled with ice and inside a caviar can – branded with the name “Better Than Beluga”.

Furthermore, the chef introduces “Riso-Pizza” or the brilliant interpretation of a chemistry between risotto and a pizza. The baked risotto which was soaked with flavorful milk is ingeniously mixed with a sauce made from Vesuvian tomatoes and served with crusts surrounding the rice. When combined and eaten, it was true to what he promised us – a risotto and a pizza on a single bite!

Heading to the climax, the chef and his benevolent crews teamed up to showcase their artistic skills by creating a colorful painting on a plate. The psychedelic spin-painting of colors red, white, and green made from red beet emulsion, potato puree, and chlorophyll was then topped with a smoky sous-vide veal and given a final touch with Villa Manodori extra old balsamic vinegar and horseradish.

The desserts came in two parts. The first one was the breathtaking rendition of Caesar Salad in a form of lettuce decorated with flower petals, dried chamomile, jasmine, raspberries and some other 20 natural ingredients. It was a different story with every bite of it!

Last but not the least, it’s the turn of Chef Bottura’s iconic “Oops! I Dropped the Lemon Tart” which was mind blowing in terms of presentation, the story behind it, and as well as the taste.

Three hours has passed and like a fleeting dream, we enjoy every second of the moment with Chef Massimo Bottura at Hotel Mulia Senayan.

Not forgetting to share his support for Indonesian food, his encouraging words are meant for us all to work together as a whole nation – from the government, the farmers, the businesses, the journalists, as well as the people to regain their pride over the country’s rich diversity of ingredients and the cuisines. Hoping that one day, someday soon, we can show the world that we can make it!

The All New Three Flavors for Meat Lovers from PHD

Tidak cukup dengan Meat Lovers yang selama ini menjadi primadona penggemarnya, PHD kini memperkenalkan variasi Meat Lovers dengan tiga jenis saus dasar berbeda dan pinggiran baru yang tidak kalah serunya!


Siapa sih yang selama ini belum pernah menjamah kenikmatan Meat Lovers dari PHD? Sebagai salah satu menu paling legendaris sejak masa Pizza Hut berdiri pertama kali, kehadiran PHD turut mempopulerkan pizza yang menggiurkan ini.

Sulit untuk tidak mengenali satu loyang pizza hangat yang dipenuhi dedagingan ini. Berbagai macam topping seperti sosis sapi, smoked beef, daging cincang, beef burger, dan keju mozzarella mewarnai keseruan Meat Lovers dengan saus pizza klasiknya.

Nah, inovasi terbaru dari PHD yang baru-baru ini diperkenalkan adalah Meat Lovers dengan tiga pilihan saus dasar baru sebagai opsi pengganti saus tomat tradisionalnya.


Sebut saja tiga base sauce menggiurkan seperti HONEY BBQ yang kental dengan rasa smoky sekaligus asam, gurih, dan manis secara bersamaan – nah, ini adalah favorit saya pribadi!

Selain itu ada juga CHEESY MAYO dengan rasa yang begitu kaya dan tebal, serta yang ketiga adalah SPICY TOMATO – sebuah saus yang begitu terinspirasi kesuksesan pizza kesukaan pribadi saya yaitu Hawaiian Chicken. Saus gurih dengan rasa dominan tomat ini disertai tingkat kepedasan yang membuat saya terus menggali satu loyang Meat Lovers tanpa henti!


Kalau kesulitan harus memilih yang mana, kenapa takut untuk memilih semuanya sekaligus seperti yang saya coba waktu itu? Layaknya berbagai panganan seru lainnya untuk mengisi waktu sambil menonton film, berkumpul keluarga atau ketika terjebak di kantor saat menanti macetnya Jakarta, pasti lebih mantap bila Meat Lovers disantap beramai-ramai!

Rupanya selain ketiga saus dasar ini, PHD tidak ketinggalan mengenalkan kreasi terbarunya yaitu SAUSAGE PASTRY CRUST yang tersedia untuk semua jenis pizza dan semua ukuran!


Pinggiran puff pastry yang berisi sosis ini lalu ditaburi dengan tambahan keju parmesan. Ya, keju parmesan yang selalu menjadi idola saya sejak masa-masa saya bersantap di Pizza Hut dulu kini tampil menggoda. Tidak hanya sebagai penambah warna namun juga sebagai penambah kelezatan sang pizza! Tentunya, tambahan keju parmesan juga dapat dipesan terpisah.

It took me years to ever finally see Decanter again. Just as I still remembered like it was back then, I am finally home.

It’s not that I came too often back then but surely there was a time when I used to go out with my colleagues from my previous career. Friday night is the time we had been looking for the whole week and we usually went out to try new places to eat and having that cuppa late at night.

Well, Jakarta’s dining scene back then was not as colorful as it is today but certainly there were places that we can always visit from time to time. Decanter was among the most exciting in Kuningan and the one that still stands tall against other come-and-go competitors coming from nearby office buildings and also with the tenants of Setiabudi One and Pasar Festival (now known as Plaza Festival).

My recent visit was originally to exclusively meet Chef Johannes Pratiwanggana. I was quite surprised to find out that Decanter houses one of the most senior chefs that Indonesian culinary scene ever has for the past few decades and also among the rarities that is still very active until this day.

Of course, he wouldn’t let me go without actually tasting some of his best in Decanter. It was late in the afternoon and dinnertime will happen in an hour or so. Despite of that, Chef Jo – as he’s usually called, presented two lovely dishes that day.

The first one was the rigatoni with spinach and pesto made from sundried tomato. It was a balance mixture between heartiness and the refreshing taste from the pesto. The single serving of it was already very generous and Decanter can also prepare the patrons sharing portion which I deem would be a really good try for group of friends and colleagues for solid lunch or dinner.

The second one was that perfect duck confit accompanied by oven-roasted potatoes. It’s actually rare to find a really good duck confit lately for me, but Chef Jo’s version is not just crispy on the outside but the in-depth flavor inside is not to be taken lightly at all.

Well, that was one helluva nostalgia. It was short but intimate, it was not at all splurging but instead, comforting. Despite the growing pains coming from the competition, Decanter actually has all that it needs to beat the odds.

If we can appreciate what Chef Jo has to offer, judging from his vast experience and finesse, Decanter is that one place to go for your weekend dates, business lunches, and even for some personal time alone.

PHD Presents The Real Cheeseburger Pizza!

Setelah sekian tahun dimanjakan oleh gesitnya layanan pesan antar dan berbagai variasi pizza-nya yang selalu menggoda, kini PHD kembali memperkenalkan kreasi pizza terbarunya – Cheeseburger Pizza!

Setelah Hawaiian Chicken Pizza yang begitu saya dambakan, rupanya kali ini PHD bermain dengan popularitas makanan khas Amerika yang menggunakan bahan dasar beef patty sebagai bintang utamanya.

Ya, apalagi kalau bukan burger. Tidak hanya itu, makanan khas Italia yang sudah akrab dengan lidah kita selama bertahun-tahun ini tentu lekat dengan makhluk lezat bernama keju. Di sinilah PHD kembali mempertunjukkan kebolehannya.

Nah, rasa cheese burger tentu sudah lekat dengan selera makan penghuni kota besar di Indonesia. Bagaimana tidak? Di saat berkumpul ramai-ramai atau terjebak dengan perut krucuk-krucuk di saat-saat ganjil, apa yang lazim diingat biasanya adalah pesan antar burger dan sejenisnya.

Kini, PHD dengan Cheeseburger Pizza-nya bisa menjadi pilihan penyelamat kelaparan!

Tapi seperti apa sih sebetulnya Cheeseburger Pizza itu?

Pertama, coba saja saksikan berbagai keseruan dari para penikmat pizza-pizza dari PHD di Instagram dengan hashtag #SeruBareng, #DuoMantap, atau #CheeseburgerPizza.

Nah, apalagi sih yang disebut Duo Mantap ini? Rupa-rupanya PHD mendeklarasikan Duo Mantap dengan maksud sebagai penggabungan dari dua hal yang kita selama ini cintai dari makanan cepat khas Barat – pizza dan burger.

Bicara soal komposisinya, Cheeseburger Pizza ini terdiri dari berbagai topping seru yang sebelumnya belum pernah terbayangkan oleh seorang penggemar pizza dari PHD maupun Pizza Hut seperti saya ini.

Sebagai contoh, ambillah ukuran sedang maupun besar dari Cheeseburger Pizza ini. Pinggiran yang biasanya berbentuk orisinil atau diisikan sosis maupun keju ini kini diimbuhi oleh banyak patty berukuran kecil. Sedikit spoiler buat kamu, patty yang saya nikmati betul-betul berasa seperti daging asli. Dengan racikan pintarnya, PHD berhasil menggabungkan daging sapi dengan berbagai bumbu sehingga patty ini tidak hanya gurih dan berisi, namun juga tetap juicy.

Sebagai topping utama di lingkaran pusat pizza ini, dapat dipastikan trio daging cincang, jamur, dan paprika mendominasi segala penjuru. Selesai dipanggang, rupanya proses finishing masih terus berlanjut. Kali ini pizza yang sudah matang dan wangi ini lalu diimbuhi dengan berbagai potongan keju cheddar di seluruh bagian. Nah, bayangkan keju yang sedikit demi sedikit meleleh karena panas dari pizza yang telah matang.

Untuk penutupnya barulah PHD memberikan imbuhan terakhir berupa mayones dan potongan daging sapi serta herbs untuk menambah rasa serta wewangian dari Cheeseburger Pizza!

Kalau ini masih belum cukup, jangan lupa untuk mencoba paket Mantap Special untuk ukuran Regular maupun Jumbo, karena keduanya akan ditambah dengan dua gelas minuman dingin pilihanmu serta empat puff pastry yang diimbuhi beef patty serta keju!

Untuk yang mencari ukuran kecil tentu tidak ada masalah, karena PHD sudah menyiapkan pizza ukuran Personal dengan tambahan dua beef puff. Bedanya pizza ukuran Personal ini tidak ditambah dengan pinggiran khusus seperti di ukuran Regular dan Jumbo. Jangan bersedih karena beef patty tetap akan ditambahkan di empat penjuru pizza ini sebagai topping-nya.

Sudah cukup tergiur? Langsung saja telpon PHD di 1500 600, sang penyelamat kelaparan dan dijamin 30 menit tiba (jika tidak, dapatkan 1 voucher gratis pizza)!

Menu Highlights: Brunching at Tredici Ristorante

Ah Senopati and Suryo. Never ceases to satisfy the empty place on that one side of our hearts as Jakartans. With an array of coffee shops and restaurants along the way, it’s easy to schedule your weekend far ahead and do that cafe hopping that you have always dreamed of.

While Tredici is not a new kid in this block, the appearance of this charming Italian ristorante has attracted a lot of people. The artificial garden behind with a small fountain and those cute striped chairs have made everyone gone crazy. Not to mention of course, the homey feeling with all of the warm, rustic wooden feel all over the restaurant that emanates the good feeling. Plus, of course, the Italian fares here!

Along with Zomato, on one fine Saturday morning, we’re up to try Tredici’s new lineup for brunch.

The opener was a really good mesalina pizza. With the charming look of the restaurant and the part where we can see clearly how they bake their pizza, there’s somehow an added value to this. Even so, the formation of this pizza was already solid on its own. There’s the all time favorite grilled chicken, red onions, and duo of cheeses – mozzarella and emmenthal. The tomato sauce worked so well and I just couldn’t help having seconds (while perhaps it was frowned upon by others).

The two mains of the brunch lineup were the savory crepes with beef sausages and scrambled eggs. The other one was the mac & cheese parmigiana benedict. The latter sounds a bit too complex and strange but it was the heartiest among the two.

While initially I thought the crepes would be like the galette type but it wasn’t and it became a bit strange somehow for me personally. Even so, it was quite hearty and the bechamel helped a lot to put everything together. Meanwhile the mac & cheese was all about the eggplants. Yes, eggplants.

Nevertheless, the sauce again came to the rescue to zip everything back to normal. This time it’s the marinara. As for the poached eggs, while it was not cleaned thoroughly to give away that charming yellow more than the whites, most of them were already a bit overcooked. Again, it was quite hearty.

What I actually quite enjoyed was the closure of this sponge cake with creamy mascarpone and blackberry coulis. That’s a good, balanced flavor between sweetness and acidity. It was not only airy and spongy but decadent at the same time.

Well, turns out that Tredici was quite nice and has its own potentials with the charming atmosphere and hearty Italian dishes. Next time, I am actually looking forward to try its more authentic menu. After all, Chef Mario as the head of the kitchen has this immense experience in Italian restaurants around Jakarta for many years. It’s good to dig in and find out his true talents.
